Easy Peasy Breakfast Burritos

So I just realized everything we have posted so far is SPICY…

These burritos aren’t necessarily spicy, but I’m assuming most people will eat them with either hot sauce or salsa. Sorry, but we just love spicy stuff! Actually, I guess you could say Alex loves spicy foods and I may just have an unhealthy obsession.

These are so delicious and you can substitute bacon for sausage or ham. OR you could add some veggies or leave the meat out. Whatever you want!

I’m attaching a visual guide to folding burritos at the bottom of this post because I figure that will be easier than me trying to explain how šŸ™‚

You can also wrap the burritos that you don’t eat in aluminum foil, throw them in the fridge, and easily reheat them in the oven.

Easy Peasy Breakfast Burritos

 

The formula for these is 1 burrito = 1 tortilla + 1 egg + 1 bacon strip
So you can make however many you want based on that. This is just a general recipe of what we did specifically.

INGREDIENTS
1 lb. thick cut Bacon (We had 9 strips)
1 bag frozen shredded Hashbrowns
9 Eggs (1 egg per bacon slice)
Mexican shredded cheese
Fresh UNCOOKED Tortillas (These are key! You can find them in the refrigerated section)

Pre-heat oven to 425.
Line a baking sheet with aluminum foil. Lay bacon strips down and bake until it’s as crispy as you want. We did about 20 minutes. It depends on how thick/fatty the bacon is and the altitude you’re at. Check on it at 15 minutes. This is the BEST way to cook bacon!

Take a large cast iron skillet and drizzle the bottom of the skillet with olive oil until it’s fully covered. Over Medium heat, cook the hash browns and season with salt and pepper for about 10 minutes per side until they’re crispy. This should take about 20 minutes (about the same time as the bacon is done). Turn the heat down in the oven to 350.

Whisk eggs together in a bowl. In a medium skillet over Medium heat, add olive oil to pan. Once hot, add eggs and season with salt and pepper. Stir occasionally to scramble the eggs.

Once the eggs are scrambled, clear some space for an assembly station. Lay out the tortillas. Add one slice of bacon to each tortilla. Divide the eggs and hashbrowns evenly among the tortillas. Sprinkle the cheese on top and then fold them up.

Bake for 12-15 minutes and enjoy!
